CSA Sweet Summer Salad
I love it when our CSA begins in June. Thursdays become like Christmas, with a wonderful delicious surprise each week. At the same time, our local farmer’s market starts up for the year, turning the Saturdays at the corner of the park into a tented food haven.
It is a lovely opportunity to try out new recipes and, indeed, new foods. (I still have to work out what to do with this week’s Kohlrabi – any ideas? Post below).
This week, I have created a raw salad using summer squash, arugula, creamy fresh lettuce greens and strawberries. Top with an aged balsamic dressing and you are set for a yummy summer salad.
Ingredients:
Large handful of fresh organic lettuce greens.
Smaller handful fresh organic arugula
3 small radishes diced.
4-5 fresh strawberries, washed and quartered
1/2 summer squash, grated
This is very complicated:
Wash all the vegetables. Place the greens in a large salad bowl. Add the radishes, squash and strawberries. Pour over your vinaigrette. Toss lightly. Yum.
