Raw Summer Squash Salad
This is such a fresh tasting dish. Add some mint and you’ve got added freshness. I liked more salt than may be proper.
1 yellow summer squash, julienned
1 courgette (zucchini), julienned
1 bell pepper, julienned
1 scallion, thinly chopped
1 Tbsp fresh basil leaves, shredded
1 Tbsp fresh parsley, chopped
(Opt) 1 Tbsp mint leaves, shredded
2-3 Tbsp white wine vinegar
Juice of 1 lemon (about 2 Tbsp)
Salt & Pepper to taste
Combine all the ingredients in a bowl and toss until well covered. Pour into a sealable baggie. Marinate in the fridge for at least four hours. The longer you leave it, the better. I left mine overnight and up until lunch. Serve straight from the fridge or at room temp.
