CSA Sweet Summer Salad

I love it when our CSA begins in June. Thursdays become like Christmas, with a wonderful delicious surprise each week. At the same time, CSA Sweet Summer Saladour local farmer’s market starts up for the year, turning the Saturdays at the corner of the park into a tented food haven.

It is a lovely opportunity to try out new recipes and, indeed, new foods. (I still have to work out what to do with this week’s Kohlrabi – any ideas? Post below).

This week, I have created a raw salad using summer squash, arugula, creamy fresh lettuce greens and strawberries. Top with an aged balsamic dressing and you are set for a yummy summer salad.

 

 

Ingredients:
Large handful of fresh organic lettuce greens.
Smaller handful fresh organic arugula
3 small radishes diced.
4-5 fresh strawberries, washed and quartered
1/2 summer squash, grated

This is very complicated:
Wash all the vegetables. Place the greens in a large salad bowl. Add the radishes, squash and strawberries. Pour over your vinaigrette. Toss lightly. Yum.
