Guacamole with a Kick Inside
Day 18: I still have a cold which I suspect is why I am adding chili to everything. Here is the guacamole I made with chili. I would normally use fresh coriander (cilantro) but, as I didn’t have any in the fridge, I used my dried powder, instead.
Ingredients:
2 ripe avocados (I prefer Hass)
1 garlic clove, crushed
I Tbs finely chopped onion
1/2 Tsp dried coriander (cilantro)
2 Tbs lime juice (I use Santa Cruz Organic)
1/2 Tsp red chilli flakes (more or less to taste, but add gradually!)
Mix everything but the avocados, in a bowl.
Cut open the avocados, remove the pits, slice into small pieces while still in their skins. Scoop out the filling into the bowl with the other ingredients. Mash together with a fork. Add salt and pepper if you’d like (I don’t think it needs it, but some people like it salty).
I think this lasted about half an hour in our house; we couldn’t stop eating it.
