Hot Spiced Cashew Coconut Drink
Day 58: Am I going cashew nut crazy? Maybe so. The perfect bedtime drink.
This is from the wonderful website gourmande in the kitchen. I did not add rum, because I didn’t have any knocking about.
Ingredients:
¼ cup/ 28g organic cashews (soaked 8 hours or overnight in fridge in water)
½ cup / 40g unsweetened shredded coconut
1 large soft medjool date (pit removed)
1-inch piece of fresh ginger, peeled and grated
1 tsp. good quality cinnamon
1 tsp. vanilla extract or half a vanilla bean scraped
2 cups/ 480ml hot water (not boiling)
1 oz. dark rum (optional)Grated nutmeg or more cinnamon, to garnish
