Ganesha’s Sweet Potatoes
Day 16: We have so many sweet potatoes, I am looking all over for recipes. This is from Kimberly Snyder. I halved the amounts.
Ingredients:
2 pounds sweet potatoes, cut into 2-inch chunks
2Tbs coconut oil
1 Tbs Curry Powder (I use hot curry powder)
1/2 Tsp turmeric
1 Tsp Celtic or Himalayan sea salt – to taste ( I use ordinary sea salt from Wholefoods)
Preheat over to 350øF (170 Celsius).
Mix the coconut oil with the herbs.
Toss the cubed sweet potatoes with the curry mixture. Lay out on a baking tray. Bake in the oven for 1 to 1.5 hours, until cooked through and crispy on the outside.
