Raw Molé – Yum!
Oh, my God, I love this recipe. And it’s raw! It is delicious, spicy AND good for you! How often can you say that? I put it in my wraps to give them an extra buzzy bite and it makes me very happy. I adapted this from the amazingly talented, Alissa Cohen and her book,Raw Food For Everyone. I adapted it to suit the ingredients from our CSA, etc.
Ingredients:
2 peppers – one Italian red and one green bell. (Original calls for bell peppers)
1 Jalapeño
1/2 Tsp red chilli flakes
1/2 Tbs ground cumin
1/2 cup cacao powder
2 Tbs lime juice (I used Santa Cruz)
One organic orange, peeled
1 Tbs apple cider vinegar
2 dates, pitted
1/2 mango, peeled
Remove seeds and stem from the peppers. Process in a food processor until finely chopped.
Add remaining ingredients and process until smooth.
