Italian Sweet Potatoes
Day 13: I love these! I adapted this from Kimberly Snyder’s The Beauty Detox. I used olive oil as I didn’t have any grapeseed oil. I, also, used more oregano as I didn’t have dried rosemary in my cupboard.
Ingredients:
1 pound of sweet potatoes, cubed
1 Tbs Olive Oil
1 Tbs dried Oregano
Pinch Cayenne
1/2 Tsp Sea Salt
Preheat oven to 350 degrees Farenheit (176 Celsius).
Toss the sweet potatoes in the oregano, cayenne and olive oil.
Bake for 1 to 1.5 hours, until crispy on outside and cooked through. Check occasionally, and stir as necessary.
