Red Tomato Salsa

This is from an old and amazing Robert Carrier book, Gourmet Vegetarian. I love this particular salsa. I’ve been making it for years. And as organic tomato season comes to an end, it is a good one to celebrate the round, red fruit!
Red Tomato Salsa Ingredients:
2 ripe beefsteak tomatoes
1 large red pepper, diced (I used an Italian pepper)
1 small red onion, peeled and finely chopped
1/2 hot red chilli (I used a jalapeƱo), seeded and sliced
2 Tbs chopped cilantro (aka coriander)
4 Tbs olive oil (I use a little less)1-2 Tbs lime juice
Salt to taste

Combine the tomatoes, pepper and onion in a bowl. Mix well. Add the chilli, cilantro, olive oil, lime juice and salt. Mix well and serve right away. Yum! Now…I need to find a recipe for raw tortilla chips, just like they made at Blossom Cafe…
