Roasted Garlicky Chickpeas
I am so excited about these! They are so easy to make, and they are deliciously healthy snacks. You can experiment with different seasonings, and you may end up having to double the recipe.
1 15oz tin, chickpeas – organic, if you like (you can pick up four cans relatively cheaply at vitacost)
sea salt, to taste
garlic powder, to taste – at least, 1tsp.
2 Tbs olive oil
Drain and rinse the chickpeas.
In a bowl, mix the olive oil, salt and garlic powder. Throw in the chickpeas. Mix with your hands until all the chickpeas are coated.
Lay out on a baking tray. Spread them out so they are well spaced.
Bake for 45-60 minutes at 350 degrees F (175C). Give them a shake around half way through. I like mine crispy, so I left them in for that extra 15 minutes, so for about an hour, total.
Allow to cool. Taste for seasonings. Add more salt, as necessary for your enjoyment (I added quite a bit more).
