Delicious Tomatillo Salsa
I can’t believe how delicious this salsa is! The Mexican farmer at our local farmer’s market gave me this recipe.
I made them with his tomatillos and jalapeños. (Ooh, vicar)
4 medium tomatillos (more if smaller), leaves removed.
1 Serrano chili, stalk removed
1 small red onion, peeled
1 garlic clove
1 large handful of chopped cilantro
1.75 cup water
salt and pepper to taste
Boil tomatillos, onion and chilli in the water for about ten minutes until tomatoes are softened. Scoop out with a slotted spoon and place in a blender (I used my Vitamix). Do not add any of the water. Add the remaining ingredients. Blend until your desired consistency.
