Yellow Tomato & Apricot Salad
I am in heaven! Seasonal fruits – this is the time. This salad is delicious.
1 Yellow Tomato, sliced
1 apricot, pitted and chopped
Handful basil leaves, shredded
Handful mint leaves, shredded
1/2 red onion, thinly sliced
1/4 Tsp rock salt, to taste. You may want more!
1 Tbs balsamic vinegar to pour over.
Arrange the sliced tomatoes on a plate. Insert the sliced onions between each slice. Scatter over the herbs and apricot. Sprinkle on the ground rock salt. Gently pour over the balsamic vinegar. Give your taste buds a delight.
