Cherry Tomato & Basil Fragrant Salad
I am sooooo excited tomato season is here! You can’t beat the taste of a fresh, organic tomato. Yes! Yes! Yes! This salad is unbelievable fragrant. I am proud to say, I grew the basil myself. Yes. In my New York City apartment. On the window ledge. Very proud mama.
Handful of cherry tomatoes, quartered. If you can get organic, do yourself a favour and get them.
Handful of basil leaves, torn into shreds
Small red onion, sliced thinly
1/2 tsp ground rock salt
1 Tbs balsamic or red wine vinegar
2-3 Tbs good olive oil
Place salad ingredients in a bowl. Shake up the salt with the vinegar in a screw-top jar. Add the olive oil. Give it a good shake until thoroughly mixed. Pour over the tomatoes, etc. You don’t even need to toss it.
