Blueberry Coconut Smoothie

Day 56: This smoothie is so refreshing. I love it.
Blueberry Coconut SmoothieMy husband came in with a bottle of organic coconut water the other day, saying he thought I’d like it. I do!

I was excited because it meant I could make this smoothie, which has been bookmarked for ages.

It is adapted from the Green Kitchen recipe where they add the word ‘super’ to this smoothie. It is certainly super. I did not add the ginger as I did not have any – I’ll make sure I have some next time – and I used frozen blueberries and a fresh banana. He lists them the other way around in the recipe. I would also dispute the 2 glasses measure – I guess I like a lot of smoothie when it is this tasty!

 

Ingredients:

1 cup fresh blueberries
1/2 cup coconut water
1 frozen banana
a big chunk fresh ginger, minced
juice from 1 lime
2 tbsp coconut flakes
a handful of walnuts

Okay, this is extremely complicated…..
Throw all the ingredients in the blender. Blend it for half a minute. Taste it and add more ginger if needed. See? Super complex.

(He says he used almost 2 inches – of ginger!- but he likes it quite strong)
