Paprika Sweet Potatoes

Day 34: Okay, I am learning to love sweet potatoes. This is not just a 60-day raw/vegan challenge, it is also a seasonal challenge, thanks to my winter CSA. This is so easy and, by far, the nicest roasted sweet potato dish I’ve made. Even my daughter chows down on these!

Paprika Sweet PotatoesIngredients:

1 large sweet potato, cubed
1 Tbs olive oil
All the herbs are approximate, to taste:
1 Tbs paprika
1 1/2 Tsp marjoram
1 Tbs garlic powder (see – you don’t even have to cut one up!)
1 Tbs dried parsley

Preheat oven to 375 degrees Farenheit (190.56 Celsius)
Put the cubed sweet potato in a baking tin. Pour over the dried herbs. Pour over the olive oil. Mix everything together with your hands, making sure the sweet potato cubes get nice and covered.

Bake for about 25 minutes. Give them a shake to turn them over after 10/15 minutes. Bob’s your uncle. Easy.
